Guest Post: Honey Chipotle Shrimp Tacos
Ingredients
- 12 small corn and/or flour tortillas
- Salt & pepper
- 2 cups shredded cabbage
- 3 tbsp. sour cream
- 1 lb. fresh shrimp, shells removed and deveined
- 3 tbsp. mayonnaise
- 1 tbsp. jalapeno, seeded and minced
- 2 tsp. chipotle chili powder
- 1 clove garlic
- 2 limes, cut into slices
- 2 tbsp. butter
- ½ cup crumbled cotija cheese
- 1 tbsp. honey
Instructions
- In a small serving bowl, mix chipotle chili powder with mayonnaise, sour cream and squeeze of lime wedges to taste. Set aside.
- Dice shrimp.
- Heat butter in sauté pan. Add garlic and jalapenos. Sauté until aroma is released (30 seconds). Add shrimp and honey and sauté until cooked; about 1-2 minutes.
- Warm tortillas.
- Prepare taco with a) shrimp, b) sauce mixture, c) cabbage, and d) cotija cheese. Squeeze with lime, if desired.
